This is SO good and relatively easy (if time consuming). The ham can be expensive, but even a small one yields TONS of leftovers for sandwiches, lunches etc.
1 bone-in picnic ham (this is the really important part. This will not work with a nugget or processed ham. It must have the bone in!) 1 - 2 cans of Guinness (Dark beer of any kind will work, but Guinness works best) Bay Leaves 1- 2 Onions quartered Garlic - peeled 1 tsp - 1 tbsp Peppercorns 1 tsp - 1 tbsp Mustard Seeds DIRECTIONS Unwrap your ham from packaging and place in a large stock pot Toss in a couple of Bay leaves, onions, garlic, peppercorns and mustard (feel free to add any other spices you want as per your tastes) Pour Guinness into the pot Fill the pot up with water until the ham is fully submerged and you have about an inch of water over the top Bring to a boil Once it boils, you may get a layer of fat on the top of the water. If this happens, skim it off. Set your pot to boil at a nice roll and go about your business, checking every once and a while to ensure that the water level doesn't need to be replenished Boil for about 20 minutes per pound It will start to come off the bone and look dark purple and almost swollen. That's good, it's supposed to do that Once it's done, take it out of the pot (be careful, it will be heavy and likely falling off the bone) and let it rest for 5 - 10 minutes. Slice and serve! A note about pre-soaking ham Many recipes will tell you to pre-soak ham to reduce the salty flavour. The reason I love doing my ham this way, is that the beer counter acts the salt taste so you don't get that with this.
