Pro Tip Feel welcome to change up the creamed soup and/or cream cheese to suit your taste (i.e. substitute cream of mushroom soup or chive cream cheese)

This is the easiest thing in the world when you need to run out the door and have dinner ready when you get home. You can flavor it anyway you like which is the best part!
1-2 Rack of Ribs Spice mix/Soup Mix 1 cup water DIRECTION Put your ribs in the crock pot, you can do this fresh or frozen which is what makes it really easy. Pick your favorite dry spice flavor. I use onion soup mix, or herb and garlic mix. Whisk your flavoring into one cup of water (if using onion soup or similar, strain out any solid bits) Pour the water into the crock pot, on top of the ribs Cook on low for 4 hours if fresh or 6-8 if frozen Done! The biggest issue with this is that the meat is often "fall off the bone" so if you can, adding a grate to the bottom of the crock pot is helpful. This one's a weekend wonder. It's surprisingly easy and a good way to impress guests. I took it from A Spicy Perspective and the original can be found here.
A couple of notes, the original recipe calls for beef tenderloin which is super, super expensive (although my Mother swears by Costco tenderloins and you can occasionally find them on sale). I find that just about any lean beef roast works well as the marinade compensates for any toughness.
Pro tips: Before wrapping the beef, pre-cook the bacon about half way, and pour the bacon fat into the crock pot to keep the flavor). My boys like a LOT of sauce, I usually double the liquids. |
