This one's a weekend wonder. It's surprisingly easy and a good way to impress guests. I took it from A Spicy Perspective and the original can be found here.
A couple of notes, the original recipe calls for beef tenderloin which is super, super expensive (although my Mother swears by Costco tenderloins and you can occasionally find them on sale). I find that just about any lean beef roast works well as the marinade compensates for any toughness.
Pro tips: Before wrapping the beef, pre-cook the bacon about half way, and pour the bacon fat into the crock pot to keep the flavor). My boys like a LOT of sauce, I usually double the liquids.
